In Portugal, some say there is a codfish recipe for every day of the year. The à Lagareiro is one of the best loved, and one of the hardest to fake: there is no sauce hiding anything.
The secret is the olive oil
The name comes from the lagar, the mill where olive oil was made. It is good, generous olive oil that binds the roasted loin to the smashed potatoes and golden garlic. A poor oil ruins it all.
