Francesinha in Lisbon: an honest guide from people who serve it daily

The francesinha was born in Porto, but it has conquered Lisbon too. The trouble is that, among so many versions, it is easy to end up with a weak one. Here is what we look for before serving one to anyone.
The sauce is everything
A francesinha lives or dies by its sauce. It has to be hot, full-bodied and lightly touched with beer and tomato, never watery. If the sauce runs like soup, something went wrong.
The layers inside
Bread, cured sausage, fresh sausage, steak and ham, all wrapped in melted cheese. At O Vareiro we serve the classic Porto style, a chicken version for a lighter take, and the Animal, at around one kilo, for anyone who arrives seriously hungry.
- Ask for a fried egg on top if you like the yolk melting into the sauce.
- Fries on the side, so they stay crisp.
- A cold draught beer cuts through the richness.
A good francesinha is not eaten in a hurry. It is made in silence and eaten in conversation.
